Hot fudge sauce - Ice Cream




2 ⁄3 cup heavy cream
1⁄2 cup light corn syrup
2 tablespoons firmly packed dark brown sugar
5 ounces bittersweet chocolate, coarsely chopped
Pinch salt
1 teaspoon vanilla extract

MAKES ABOUT 2 CUPS

Warm, gooey chocolate sauce poured over vanilla ice cream is the ultimate simple pleasure, but the deep, rich, chocolaty flavor enhances a variety of frozen treats as well. Try it with Peppermint Ice Cream or Marscapone-Hazelnut Gelato

In a heavy saucepan, combine the cream, corn syrup, and brown sugar.
Bring to a boil over medium-low heat, stirring occasionally until the sugar is dissolved, about 5 minutes.

In a heatproof bowl, combine the chopped chocolate and salt. Pour the hot cream mixture over the chocolate and stir with a heatproof silicone spatula until the chocolate is melted and smooth. Stir in the vanilla.

Use right away, or cover and refrigerate for up to 3 days. Reheat gently over low heat before serving (you may need to thin it with a little cream).
