Chicken Fingers with vegetable rice




Ingredients for chicken fingers
2 Chicken Breasts – Cut into thin strips
2 Cup Shop Bought Golden Breadcrumbs
1 teaspoon Garlic Powder
1 teaspoon Freshly Ground Pepper
Salt to taste
1 teaspoon Paprika
2 Eggs
Oil to deep fry
Ingredients for vegetables:
1.5 Cup Precooked - Plain boiled Rice - Cold
1 Cup Mix Frozen Veg
2 tablespoon Oil
Salt & Pepper to taste
1 teaspoon Soya Sauce
Method for chicken
1. Thoroughly wash the chicken strips and leave on a kitchen towel to dry
2. In a bowl add the garlic powder, pepper, salt and paprika and mix well
3. Place chicken strips in the bowl and coat well in the mixture
4. Leave to marinate for 5-10 minutes
5. In a second bowl add the breadcrumbs
6. In a third bowl whisk the eggs
7. Heat enough oil in a wok that you can deep fry the chicken fingers in
8. One by one, add chicken strip in egg first then coat in breadcrumbs
9. Repeat coating process once more
10. Add the strips to the hot oil and fry till the chicken is cooked and the crust is golden brown and crispy
Method for Rice
11. Heat a non stick wok
12. Add the oil and then add the vegetables
13. Fry for 2-3 minutes
14. Add salt & pepper and stir fry till they are cooked but have a bite to them
15. Add the rice into the wok
16. Stir fry till heated thru
17. Add the soya sauce and mix well
18. Remove off heat and serve immediately
